Chef Josefinna Vallve joins Asado as the new Chef de Cuisine
Chef Vallve is a graduate of the prestigious Gastronomic Institute D’Gallia, where she earned distinction as a member of the honour roll. Her professional experience includes stints at fine dining establishments where she helped to craft dishes that paid homage to Peruvian cuisine. Her experience, combined with her cultural background and her distinguished training, have led to a sophisticated mastery of Latin American cuisine, which she is skillfully putting into practice as the new Chef de Cuisine at Asado at Palace Downtown. Chef Vallve’s exciting new additions to the Asado menu include heritage dishes guaranteed to transport diners to the very heart of Latin America, like Merluza con Arroz Negro y Salsa de Langostinos (Chilean sea bass with squid ink risotto), and Tira de Asado (slow-cooked short ribs with creamy mashed potatoes).
